The first step involves meticulously selecting the carob pods (Ceratonia siliqua) to ensure a high-quality raw material. They are then thoroughly cleaned to remove any impurities (dust, leaves, residues), in accordance with the strictest hygiene standards. This rigorous sorting ensures a sound and homogeneous base for the subsequent stages.
Once cleaned, the carob pods (Ceratonia siliqua) are ground using specialized equipment. This process allows for the precise separation of the pulp and seeds. The seed, rich in locust bean gum, and the pulp, which is naturally sweet and nutritious, each follow a specific valorization path depending on the products to be manufactured.
The pulp is then transformed into various products according to needs: carob powder with a cocoa-like taste, molasses, or other derivatives. Roasting and fine grinding techniques allow for a homogeneous texture and organoleptic qualities suitable for the food, pharmaceutical, or cosmetic industries.
Finally, the finished products are packaged in suitable, airtight containers that comply with international food standards. This packaging ensures the preservation of nutritional and organoleptic qualities while guaranteeing the traceability and food safety of products destined for local and international markets.
