carob ?

is a trioic and evergreen Mediterranean fruit tree of the Leguminosae (or Fabaceae) family. It has been used since Antiquity for its fruits (carobs), for humans and livestock. Able to produce on poor land on the fringe of crops or on hillsides that are difficult to cultivate, the carob tree has provided a vital resource to many peoples of the Mediterranean.

The carob tree is naturally present in the thermophilic forest or pre-forest vegetation of the Mediterranean where it is often associated with Pistacia lentiscus9. It finds its greatest ecological gradient in the western Mediterranean basin. .

Each carob weighs between 15 and 30 grams (depending on the variety and the state of freshness) and contains fleshy pulp consisting of 40% sugars (glucose and sucrose), 35% starch, 7% protein, and , in smaller proportions, fats, tannins and mineral salts. Carob is rich in calcium, phosphorus, magnesium, silica, iron and pectin. The thickening properties are due to the presence of a sugar, galactomannan.

Two very different products are obtained from the carob tree, which are widely used by the food industry: carob flour and carob gum. Locust bean gum comes from the white, translucent endosperm of the seeds, after removing the thin brown husk that covers it. It acts as a thickener. It is mainly used in the food industry, but also in other industrial applications (paper industry, textiles, pharmaceuticals, cosmetics, etc.). Carob flour is obtained by grinding the entire pod (pulp and skin) with the exception of the seeds. The crushing of the pods generates the release of a strong and persistent odor.
